Nicoleta Pana, part owner of <a href=\"https:\/\/lunasvegancorner.com\/\" target=\"_blank\" rel=\"noreferrer noopener\">Luna\u2019s Vegan Corner<\/a>, risked the odds when she launched a vegan restaurant just seven months before the pandemic hit. <\/p>\n\n\n\n<p><\/p>\n\n\n\n<p>Nicoleta, 34, discusses how close she came to not making it through. \u201cWe almost shut down because we couldn\u2019t cope with the amount of bills coming in. It took a year for Nicoleta to find the right place, but Luna\u2019s finally landed on Wellfield Road, Roath seven months before the pandemic.<\/p>\n\n\n\n<p>Three Welsh lockdowns later, Nicoleta and her two partners are still processing the financial hit to their newly formed business, and cut costs wherever they can. &#8220;It affects your mental health because you just don&#8217;t know what to do, especially when it&#8217;s your only source of income,&#8221; she confesses.<\/p>\n\n\n\n<p>Now, Nicoleta considers the reality of Luna\u2019s future with hesitance. \u201c\u200b\u200bI\u2019m still cautious because I don\u2019t know when we might have a massive flare up and have to <a href=\"https:\/\/cardiffjournalism.co.uk\/altcardiff\/2020\/11\/27\/james-chant-matusdai\/\" target=\"_blank\" rel=\"noreferrer noopener\">shut down<\/a> again.\u201d&nbsp;<\/p>\n\n\n\n<p>However, unlike other independent businesses, Luna\u2019s has pulled through the Covid-19 crisis. \u201cThere are so many vegan places that have shut down,\u201d she says with a frown, \u201cthey\u2019ve halved \u2013 if not less than halved now, which is really sad.\u201d A witness to the declining success of her peers, Nicoleta maintains a steely resolve not to fail. \u201cI feel a real pressure because we need to prove that we are &#8211; as an independent vegan business &#8211; worth staying open.\u201d<\/p>\n\n\n\n<h5 class=\"wp-block-heading\">Hollywood silver linings<\/h5>\n\n\n\n<p>Despite the trials of lockdown, Nicoleta never forgets to attribute Luna\u2019s survival to her loyal customers, and remains bashful about the attention it attracts. \u201cWe have quite a few celebrity appearances,\u201d she admits with a blush. \u201c<a href=\"https:\/\/www.instagram.com\/p\/B09gT5hFAXE\/\" target=\"_blank\" rel=\"noreferrer noopener\">Teresa Palmer<\/a>\u2019s children love our arancini \u2013 they know the place not as Luna\u2019s Vegan Corner but the arancini place!\u201d<\/p>\n\n\n\n<p>Never forgetting the loyalty of her regular customers, she quickly adds, \u201cWe have some really good customers but of course our regulars are just as amazing as our A-list celebrities.\u201d<\/p>\n\n\n\n<h5 class=\"wp-block-heading\">Hesitant but hopeful<\/h5>\n\n\n\n<p>Looking retrospectively, Nicoleta thanks the one good thing coming out of the pandemic: her time to think. \u201cAs an entrepreneur at the beginning, you don\u2019t have time to do anything,\u201d she smiles, \u201cso this has given us a chance to step back and really focus on what we want to do, where we want to be.\u201d <\/p>\n\n\n\n<figure class=\"wp-block-pullquote\"><blockquote><p><\/p><p>The one good thing coming out of the pandemic: time to think<\/p><\/blockquote><\/figure>\n\n\n\n<p>Hesitant but hopeful in the restaurant\u2019s plans to release a vegan cookbook, Nicoleta also aims to launch a personal podcast. \u201cIt will be about <a href=\"https:\/\/cardiffjournalism.co.uk\/altcardiff\/2019\/11\/11\/voxpop-what-do-you-think-about-the-rise-of-veganism\/\" target=\"_blank\" rel=\"noreferrer noopener\">veganism<\/a>, but also the financial elements of the business,\u201d she says, before breaking off to recite tips on podcasting for anyone starting out.&nbsp; &nbsp;<\/p>\n\n\n\n<p>Nicoleta is resolute in her future vision for  Luna\u2019s Vegan Corner. She says, \u201cIt was a little bit touch and go for a while. But, as time progresses, I really think we\u2019re going to do just fine.\u201d<\/p>\n\n\n\n<p><\/p>\n\n\n\n<h5 class=\"has-text-align-center wp-block-heading\"><span class=\"has-inline-color has-vivid-cyan-blue-color\">Nicoleta\u2019s pandemic survival kit:<\/span><\/h5>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>Avoiding any non-essential debt:<\/strong> \u201cBecause we didn\u2019t take out any loans, we didn\u2019t have anything to pay apart from our rent which was our major cost.\u201d<\/li><\/ul>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>Having business partners as full time employers and employees:<\/strong> \u201cOur wages came down to how much we could pay ourselves and we paid ourselves the minimum so we could afford our bills.\u201d<\/li><\/ul>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>Always updating customers: <\/strong>\u201cSocial media helped a lot with keeping people updated all the time because every single day something changed.\u201d<\/li><\/ul>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>Rolling with the changes: <\/strong>\u201cThe hours changed as the rules changed and when takeaway became our only option, we had to change our menu to introduce more \u2018delivery friendly\u2019 food items like burgers and vegan monkfish.\u201d<\/li><\/ul>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>Budget, budget, and budget again:<\/strong> \u201cWe had to budget everything, it really was just a case of not spending anything!\u201d<\/li><\/ul>\n\n\n\n<p><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Vegan
