She is keen to dispel the myth that a vegan diet is financially unsustainable.\u00a0<span data-ccp-props=\"{&quot;201341983&quot;:0,&quot;335559739&quot;:160,&quot;335559740&quot;:259}\">\u00a0<\/span><br \/>\n\u201cOne of our goals is to tackle food poverty, and I feel strongly that it shouldn\u2019t be a luxury to eat healthy vegetables and good food.\u00a0<span data-ccp-props=\"{&quot;201341983&quot;:0,&quot;335559739&quot;:160,&quot;335559740&quot;:259}\">\u00a0<\/span><br \/>\n\u201cWe want to show that you can make soups for pennies per portion. Eating vegetable, lentils and grains doesn\u2019t have to be expensive \u2013 these foods are cheap, they\u2019re known as peasant foods.\u00a0<span data-ccp-props=\"{&quot;201341983&quot;:0,&quot;335559739&quot;:160,&quot;335559740&quot;:259}\">\u00a0<\/span><br \/>\n\u201cI think if you were to get a big vegan burger or processed vegan foods that can be expensive because of the process behind it but the type of vegan food that we sell here: grains and vegetables, it\u2019s cheap, good food.\u201d<span data-ccp-props=\"{&quot;201341983&quot;:0,&quot;335559739&quot;:160,&quot;335559740&quot;:259}\">\u00a0<\/span><br \/>\nWild Thing is running a soup special scheme \u2013 Pay what you feel \u2013 the idea being that people can eat something healthy and affordable.\u00a0<span data-ccp-props=\"{&quot;201341983&quot;:0,&quot;335559739&quot;:160,&quot;335559740&quot;:259}\">\u00a0<\/span><br \/>\n\u201cAnyone who wants to have a warm, hot meal that\u2019s tasty and healthy can come in. Even if they\u2019ve got just a pound in their pocket, they can have it,\u201d\u00a0Lauren continued.\u00a0<span data-ccp-props=\"{&quot;201341983&quot;:0,&quot;335559739&quot;:160,&quot;335559740&quot;:259}\">\u00a0<\/span><br \/>\n\u201cWe haven\u2019t put a price on it, some people if they\u2019ve got a lot of money and they want to pay \u00a35 for a soup, go ahead. If they haven\u2019t got any\u00a0money\u00a0they can have the soup. That\u2019s one of the things we wanted to do in order to be in line with our goal to attack food poverty.\u201d<span data-ccp-props=\"{&quot;201341983&quot;:0,&quot;335559739&quot;:160,&quot;335559740&quot;:259}\">\u00a0<\/span><br \/>\nLauren\u2019s ambitions to deal with food poverty do not end here, either. The furniture is provided by a social enterprise called New Life,\u00a0which trains people who are out of work to get skills in carpentry,\u00a0while the\u00a0pottery was made by the Vison 21 charity,\u00a0another\u00a0social enterprise that trains people with learning disabilities to make pottery.<span data-ccp-props=\"{&quot;201341983&quot;:0,&quot;335559739&quot;:160,&quot;335559740&quot;:259}\">\u00a0<\/span><br \/>\n\u201cI just wanted everything in the caf\u00e9 to be ethical, we\u2019ve got Big Issue magazines, we\u2019ve got some vegan products on sale. This is all part of me wanting to make an ethical business,\u201d\u00a0Lauren reflected.\u00a0<span data-ccp-props=\"{&quot;201341983&quot;:0,&quot;335559739&quot;:160,&quot;335559740&quot;:259}\">\u00a0<\/span><br \/>\n\u201cWe don\u2019t use any single-use takeaway coffee cups, our smoothies come in glass bottles, we\u2019ve got stainless steel straws.\u00a0If someone wants to come in for a coffee,\u00a0they have to bring in their own container.\u201d\u00a0<span data-ccp-props=\"{&quot;201341983&quot;:0,&quot;335559739&quot;:160,&quot;335559740&quot;:259}\">\u00a0<\/span><br \/>\nLauren, who ran a budget vegan blog during her time at university, has developed a strong following on social media. She has over 3,700 followers on Instagram, and says people are becoming more aware of the positive impacts of going vegan.<span data-ccp-props=\"{&quot;201341983&quot;:0,&quot;335559739&quot;:160,&quot;335559740&quot;:259}\">\u00a0<\/span><br \/>\nShe said:\u00a0\u201cI think we\u2019ve got so much information now &#8211;\u00a0 we\u2019ve got computers, laptops and phones, so everyone is more aware now of the impact of a vegan diet on the environment, on our health,\u00a0and also\u00a0the ethics behind it as well.\u00a0<span data-ccp-props=\"{&quot;201341983&quot;:0,&quot;335559739&quot;:160,&quot;335559740&quot;:259}\">\u00a0<\/span><br \/>\n\u201cI think people are becoming more aware of it and that\u2019s why there\u2019s been such a huge rise in veganism.\u00a0I think is amazing.\u201d\u00a0<span data-ccp-props=\"{&quot;201341983&quot;:0,&quot;335559739&quot;:160,&quot;335559740&quot;:259}\">\u00a0<\/span><br \/>\nAnd after the first seven days of trading, Lauren is delighted to see the outpouring of positive reaction for Wild Thing.\u00a0<span data-ccp-props=\"{&quot;201341983&quot;:0,&quot;335559739&quot;:160,&quot;335559740&quot;:259}\">\u00a0<\/span><br \/>\n\u201cIt\u2019s been amazing, it\u2019s busy. It\u2019s a Thursday morning and there are so many people here. It\u2019s going so well, I\u2019m so happy.
