Tomato and Sausage Pasta

If you can’t tell already, we love pasta. It’s cheap, easy and quick to make, and just so bloody tasty. It’s also very versatile, you can pretty much combine anything you have in your fridge to pasta for a decent meal, and that’s exactly what we’ve done here.

To make this 5-ingredient recipe veggie, just swap the meat for a plant-based sausage – it works just as well.

Ingredients – (serves 2)

Prep time – 5 minutes

Cooking time – 15 minutes

  • 2 sausages (we find Cumberland works best but any leftover pork or beef (meatballs) will work fine!) 
  • 250g passata or tinned tomatoes (whatever you have available)
  • 1 tsp of olive oil
  • 120 pasta (we prefer fresh but dried works perfectly)
  • 100g Boursin (other brands available)

Method

  1. Cut up the sausage (or meat of choice or meat substitute) into small pieces.
  2. Put your pasta on to boil, following the packet instructions.
  3. Add the sausage to a pan with your olive oil and fry them off until they’re nice and golden.
  4. Add your tomatoes or passata and let this simmer for five minutes.
  5. Stir in your garlic cream cheese until melted and glossy.
  6. Strain your cooked pasta, add to your sauce and season to taste.
