Desserts from the Chemistry Lab

Cardiff girl Carly Karran has set up the city’s first nitrogen ice cream bar, Science Cream, hiring all Cardiff University chemistry students.

 This Heston Blumenthal inspired concept sounds like a bit of a gimmick but as Carly says, “basically the nitrogen is -196 degrees, and the quicker you freeze ice cream the less of a chance there is that ice crystals form, so you get this really smooth texture, so it’s a gimmick that produces a really lovely ice cream.”

 All the ice cream connoisseurs are chemistry students reassuring customers that they are getting a truly scientific experience when visiting the parlour.

 The flavours change every week although vanilla and chocolate are always on the menu.
