This Pancake Day, as we wield our frying pans and embark on the tricky task of choosing our favourite toppings, it’s the perfect opportunity for you to get creative and use the ingredients that are already buried in your cupboard.
You don’t need to go out and buy loads of new ingredients. Pancakes can be easy on the planet and easy on your pocket if you experiment and use items in your cupboards that you’ve forgotten about.
Whether you’re a sweet or savoury person, enjoy yourself this Pancake Day and get thrifty. We’ve got three tasty pancake recipes for you to try.

Sweet Toppings
- Fruit, especially the kind that’s in season
- Frozen fruit works brilliantly if you turn it into a compote. It sounds super technical, but trust us, it’s easy! Add your frozen fruit to a saucepan with a sweetener of your choice (sugar, maple syrup, honey) and let it come to a boil. Once boiled, bring down to medium heat and let the mixture reduce to about half. Then let it cool and you have a delicious and fancy looking pancake topping that you could keep in your fridge and add to your weekly breakfast.
- Sugar and lemon (a classic). If you don’t have fresh lemon, lemon juice works just as well
- Honey, maple syrup, agave
- Jam and cream
- Any kind of nut butter
- Chocolate spread or melted chocolate
- Yoghurt
Savoury Toppings
- Bacon
- Butter
- Add an egg (poached works well)
- Smoked salmon
- Cheese (grated or cream)
- Avocado and tomatoes
2 Ingredient Banana Pancakes
Ingredients
- 1 ripe banana
- 2 eggs
- Oil or butter for frying
Method
- Mash the banana in a bowl with a fork.
- Whisk two eggs and combine with banana.
- Once the mixture is combined and silky, add the mixture to a hot frying pan that has been coated with oil or butter.
- Once the underside is golden, flip and repeat.
- Repeat steps 3 and 4 until all the mixture is gone.
3 Ingredient Banana Vegan Pancakes
Ingredients
- 1 banana
- 50g rolled oats
- 4 tbsp plant-milk of your choice
- Oil or butter for frying
Method
- Add your oats, banana and plant-milk to a blender and blend until smooth.
- Once the mixture is smooth, add the mixture to a hot frying pan that has been coated with oil or butter.
- Once the underside is golden, flip and repeat.
Traditional Pancakes
Ingredients
- 150g plain flour
- 2 large eggs
- 350ml milk
- Oil or butter for frying
Method
- Sieve your plain flour into a mixing bowl to prevent having a lumpy mixture.
- Crack in your eggs and slowly add milk while whisking.
- Keep whisking your mixture until soft and smooth.
- Add the mixture to a hot frying pan that has been coated with oil or butter.
- Once the underside is golden, flip and repeat.
