5-ingredient banana and oat cookies

These cookies are so tasty, they’ll make you go bananas. Sorry.

Sometimes we all need a sweet treat. But instead of grabbing a chocolate bar, tub of ice cream or dunking the fourth biscuit into your cuppa, why not make these quick and simple banana and oat cookies for a homemade treat?

Eat these cookies while they are warm or store them in Tupperware for a weekly snack. They can also be made vegan by swapping the honey for some agave nectar.

Ingredients

Prep time – 5 minutes Cooking time – 15 minutes

  • 2 medium ripe bananas 
  • 160g oats
  • 80g smooth cashew butter (peanut butter works just as well)
  • 1 tbsp cinnamon
  • 2 heaped tbsp honey

Method

  1. Preheat the oven to 180C and line a tray with baking parchment.
  2. Mash up the bananas with a fork then add in the oats, cinnamon, honey and cashew butter.
  3. Mix well until everything is combined.
  4. Using a tablespoon, dollop spoonfuls of mixture onto the baking parchment.
  5. Bake for around 15 minutes until the edges and slightly browned and they aren’t too soft to touch.

Optional extras: Stir in a handful of chocolate chips, raisins or seeds of your choosing.
