From the archives of Nanny Davies, grandmother to our writer, Chelsea, this five-step Welsh Cake recipe bakes a delicious sweet treat that’s a seasonal staple for households celebrating the patron saint of Wales. However, we can’t promise there’ll be any left to eat by 2nd March.

Ingredients – (makes 20)

  • 225g self-raising flour
  • 85g butter
  • 115g caster sugar
  • 85g currants
  • 1 egg
  • 1 tbsp mixed spice
  • A splash of milk

Method

  1. First, mix all of the ingredients together in a large bowl. Add a sprinkle of flour if the mixture is too wet and milk if the mixture is too dry. Repeat until a non-sticky dough is formed. 
  2. Next, on a clean, flat surface, sprinkle some flour and roll the dough to the width of your finger. Be sure to have a consistent width so the dough will cook evenly. 
  3. Using a cookie cutter – a cup will also work – cut out circles from the dough. You can re-roll what’s left and repeat until there’s no more dough.
  4. If you don’t have a bakestone, grease a frying pan or griddle pan over medium heat with butter or oil. In manageable batches, cook the dough for around two minutes on each side until browned, checking regularly so the dough doesn’t burn.  
  5. When cooked, arrange onto a large plate and sprinkle generously with sugar.
