On-the-go breakfast oats

Our overnight oat recipe is cheap, quick and easy. Top your apple oats with whatever toppings you have available. We have used cinnamon and pumpkin seeds.

Sometimes, if not most times, we struggle to find time for a proper breakfast during the working week, which can be bad for our health. We’re all too accustomed to grabbing whatever we can in our cupboards, or even buying a quick sandwich in the supermarket on the way to work. We hope this on-the-go overnight oats breakfast will cut the need for rushing in the morning, and keep you energised for a productive day.

You can make this recipe the night before, and store it in your fridge in Tupperware or a glass jar. The combination of sweet, crisp apple, creamy cinnamon oats and crunchy seeds makes for a delicious start to the day, making a quick breakfast option that can easily be replicated throughout the week.

Ingredients – (serves 2)

Prep time – 5 minutes

  • 1 Braeburn apple
  • 40g oats
  • 125ml of your preferred milk
  • 2 tbsp of your favourite yoghurt
  • 1 tbsp honey
  • 1 tbsp nut butter
  • 1 heaped tsp cinnamon
  • A handful of pumpkin seeds

Method

  1. Grate the apple onto a chopping board. You can leave the skin on.
  2. Mix all of the ingredients together in a bowl or mason jar and pop in the fridge overnight.
  3. The morning, add an extra squeeze of honey, a handful of seeds and enjoy.
